Satisfy your sweet tooth without breaking your #newyearnewyou resolutions! For the third part of our blog series, Jess Moses from Freshly Snapped is treating us to dessert…
I’m so obsessed with nice cream – who ever came up with this concoction is my hero! It’s literally the simplest thing to make, tastes so indulgent and is completely guilt-free. This is the perfect recipe for anyone who’s got that sweet tooth, yet trying to avoid those nasty refined sugars… i.e most of us. It might sound weird replacing a decadent dessert for a frozen banana bowl but trust me, when you add the delicious flavours, your tastebuds will be seriously satisfied. This is perfect to enjoy for dessert, as a snack or even for brekkie.
This nice cream has got the sweetness from the bananas, the spice from the vanilla and cinnamon, the superfood goodness from the maca, the salt to balance the sweet and the crunch from the toppings. It’s a serious game changer when it comes to sugar swaps. It’s dairy free too, so for anyone avoiding dairy, we’ve got your ice cream fix covered!
Serves 2
Ingredients
3 frozen ripe bananas
1 tsp of vanilla powder
1 tablespoon of cashew butter
1 teaspoon of maca powder
½ teaspoon of cinnamon
¼ teaspoon of pink himalayan salt
½ tsp honey or maple syrup (optional)
Toppings
Handful of shelled pistachios
1 teaspoon of bee pollen
1 teaspoon of cashew butter
Dash of cinnamon
Method
Start by peeling your ripe bananas, chopping into quarters and then freezing overnight. Make sure you’re using really ripe bananas, as these are the sweetest!
Once frozen, remove from the freezer and leave to soften for about 5 minutes. Then add to your food processor and blitz (unless you have a high quality blender like a Vitamix, it’s best to make this in a food processor).
Process the bananas for a minute so they start to break down. Scrape down the sides and add in the remaining ingredients, then process again. This will take a few minutes until the bananas have completely broken down. Eventually it should form a thick, smooth and creamy consistency.
Then transfer into your bowl and top with the shelled pistachios, cashew butter, cinnamon and bee pollen. I love topping it with something crunchy like nuts to get a real contrast in textures.
